Kakushigura Mugi Shochu is a traditional Japanese barley-based spirit meticulously crafted by Hamada Shuzo in Kagoshima Prefecture. This honkaku (authentic) shochu is produced using carefully selected superior barley and white koji, which play a crucial role in the fermentation process. Distilled under reduced pressure, the shochu is then aged in oak barrels for three years, allowing it to develop a rich and complex flavour profile. The oak maturation imparts subtle vanilla and woody notes, resulting in a well-balanced spirit reminiscent of a smooth, mild whisky. The name Kakushigura translates to Hidden Distillery, reflecting the traditional and artisanal methods employed in its production.
