Jangsoo Makgeolli is a widely recognised commercial makgeolli produced by Seoul Jangsoo Co., Ltd., known for its smooth, lightly fizzy, and refreshing taste. Unlike raw makgeolli (Nongju/Takju), which is unpasteurised and contains active fermentation cultures, Jangsoo Makgeolli is pasteurised to extend its shelf life while still preserving a traditional flavour profile. Made from polished rice, water, and nuruk (fermentation starter), Jangsoo undergoes a long-term, low-temperature fermentation process, creating a balanced sweet, tangy, and creamy taste.
Raw makgeolli, on the other hand, is an unfiltered and unpasteurised version that retains live lactobacilli, providing probiotic benefits and a more complex, evolving flavour due to continued fermentation. It is more perishable and is best consumed fresh. Jangsoo Makgeolli serves as a modernised, widely accessible version of traditional raw makgeolli, making it the most commonly consumed makgeolli in Korea today.
