Kuro Kirishima is a distinguished Japanese sweet potato (imo) shochu, meticulously crafted by Kirishima Shuzo in Miyakonojo, Miyazaki Prefecture. Utilising black koji mould in its fermentation process, this shochu achieves a profound depth and complexity in flavour. The black koji not only enhances the umami characteristics but also contributes to a longer shelf life. The sweet potatoes used are locally sourced, ensuring authenticity and a rich, earthy sweetness that reflects the terroir of the region. Kuro Kirishima's harmonious balance and smooth finish have made it a favourite among both connoisseurs and those new to shochu.
