KEIGETSU Aikawahomare Yamahai-Junmai 58 is made by Tosa Brewing in Kochi, Japan, using local Gin-no-Yume rice polished to 58%. Brewed with the Yamahai method, it has natural lactic acidity and rich umami flavour. The taste is full-bodied with notes of apple, spice, and a touch of yogurt, finishing clean and dry. With 15% alcohol, SMV +4, and acidity 1.8, it drinks well chilled, at room temperature, or warmed. It pairs nicely with fatty tuna, black cod miso, wagyu croquettes, hot pot, and cheese, and has won a Silver Medal at the International Wine Challenge.
